Patent pending smoke collider system

The smoke is moving at a downward vertical velocity into the water bath, the smoke can make the corner but much of the heavy particles in the smoke collide into the water trapping them.

The end result is true smoked food with much less ash.

Although you can use most types of wood, just remember to use hard wood, such as hickory, pecan, or post oak, when smoking food.
